| Come on ladies help me! I need to do the weekly shop this afternoon and am in need of some inspiration. I'm happy to buy all my usual stuff but as I'm not going out this weekend (still recovering from this bug) I'd quite like to spend this afternoon and tomorrow doing some cooking. Now normally I'd make a batch of cakes and maybe a pie on a weekend like this, but obviously this is out. So....ideas please! A couple of things that I can spend some time cooking to entertain myself but that won't have me piling on the pounds for the rest of the week (and won't cost a fortune!). | |

| OK I've decided to make wholemeal seeded rolls and asian chicken and pasta soup for my lunches next week | |

I don't have the recipe for this soup but I make a lovely thai one that can have rice noodles added to it. Thai Soup * 1 red onion * 2-3 cloves of garlic * 1-2 tsp of minced or finely chopped ginger * 1 red chilli, finely chopped * 1/2 a pint of coconut milk * 1/2 pint of vegetable stock * splash of soy sauce * splash of lemon juice * splash of hot pepper sauce (I use Encona hot pepper sauce but you could use Tabasco or something similar) * a few handfuls of spinach Heat some oil in a large pan before adding the onion, garlic, ginger and chilli. Fry for a few minutes until soft Add the coconut milk, vegetable stock, soy sauce, lemon juice, hot pepper sauce and spinach. Stir and simmer for 5-10 minutes Really simple, and tastes like a Wagamama's soup | |

| I don't have the recipe to hand but it was from the BBC's food website. I ended up making my own version:
2 x Chicken Breasts 3 x Chicken Stock Cubes 1 x Bag of Beansprouts 1 x Tin of Sweetcorn 1 tsp of chilli flakes
Simmer the diced chicken breasts in the stock and chilli flakes until cooked, add the sweetcorn and about 1/3 of the beansprouts, leave to soften. Add the rest of the beansprouts gradually until all softened. That did my 5 packed lunches for the week (along with the roles I made)
I do a mean pea and mint soup too if you're interested. | |

| Glad to be of service. I make soups most weekends for my lunches, but this weekend I cheated and bought ready made ones! | |

I had a hangover Sunday so I didn't make my usual soups - so I'm lunchless today!! | |

| I am lunchless yet again!!! I went home with all good intentions but about half an hour after I got in developed a really sicky headache and ended up going to bed early so lunch today is going to be a cup a soup not happy | |
